Summers are horrible here. Even people from like Arizona and New Mexico aren’t used to summers in the DC area. It’s the H trifecta. You know, hazy, hot, and humid? It’s the humid part that really gets you. You walk outside and it’s like you’ve hit a brick wall of humid. Some of that may or may not burn off during the day. Either way, you’re still hot as you know what.
I’ve been walking to the train station so far. That may stop for a brief period depending on how hot it gets this summer. I told the hubs that I might have a start driving to the train station. He says, “Why? So, you can get in a hot car that won’t get cool until you get home? That doesn’t make much sense.”
Um…no.
I went on to explain that even though I sit in a cube office with 5 guys I’m sure they would not appreciate me smelling like I’ve hike the AT. And unless I freshen up (read take a sink bath when I get to work) I wouldn’t be able to stand myself. Let alone afflict them with that kind of aroma. “Oh.” Yeah, I don’t care how hot and sweaty I get on the way home. But I do have the other people at work to consider when walking TO the train station.
We had one day recently that was unbearable. I know there are more to come but this day was brutal. I climbed the hill in the oppressive humidity. It was so humid I couldn’t even sweat properly. As soon as I walked into the air-conditioned house the sweat just started flowing.
Sorry if I’m being a bit EW in this post, but I feel the need to share.
So, then I had to back out into the heat to let the girls out. And no, we don’t have a yard. That means I must walk them. In the still oppressive heat. And my sweat had nowhere to go, again. By the time it was all said and one, the three of us just died on the floor under the ceiling fan for a good 20 minutes. Or at least until I felt cool enough to get up and change into comfy clothes.
Needless to say, there wasn’t much for dinner that night. I was just too hot and tired to even consider it. I think I made a salad. Or had some leftovers. One of the two. It’s my go to when I’m too tired and hot to eat. I should just start planning for those days. Instead, I’m’ planning for regular meals we’re not really eating. We are, but not as I planned or when I planned.
On that night, it would have been great to have one of these waffle ice cream sandwiches to have for dinner. I could have devoured probably 2 of these babies. Because they’re oh so delicious. They’re like Lays chips. You can’t eat just one. Thankfully, the recipe doesn’t make many. It makes enough for 5 ice cream sandwiches.
You could just tell the family it only makes 4 and store one in the way back of the freezer for yourself. Maybe put it in an empty frozen vegetable bag so no one sees it. I mean, who really goes into those bags and checks that there’s veggies in there anyway.

A brunch week recipe I made a few years ago inspired this recipe. They’re a mock liege style waffle. I say mock because I didn’t add the pearl sugar to the waffles before baking. And they didn’t raise in the fridge for a long time. So, they’re mock. Which makes theme easy.
And they really are easy. They’re probably the most hands-off waffle recipe you can find. It’s more like making a bread dough then a waffle batter. Don’t think you’ve done something wrong when the dough looks like a regular bread dough and not a waffle dough.
Liege waffles are more bread than waffle. They’re cooked in a waffle iron, so I guess they’re waffles? I feel like not everything cooked in a waffle iron is a waffle. Just saying.
But you do cook the dough in a waffle iron. If you have a small ancient one like I have you might want to grab a Velcro strip or some heavy cans to put on top. The yeast raises like regular bread dough does. But you don’t really want them to raise too much when they’re cooking. I wound up putting a couple cans of while green beans on my waffle iron to keep it from puffing up too much.
And how do they taste?
Like you put brioche in a waffle iron. I guess it’s sort of like a brioche dough. It has sugar, butter, and egg in there. But not a lot of sugar. They’re just slightly sweet, which is perfect to pair with any kind of ice cream you want. No, I didn’t make ice cream to go with these beauties. These waffle ice cream sandwiches have your choice of ice cream in them.
Growing up in this area, I should be used to the heat, but I’m not. And growing up in this area cookie wiches were super popular and one of my favorite treats to get. Especially after spending a long, hot day at the pool playing with my friends.
I’d run up the truck – okay let’s be honest I never ran. I’d walk up to the ice cream truck and ask for an ice cream sandwich or one of my other favorites that shall not be name just yet. You’ll have to stay tuned with that one.
Or, if allowed, a treat from 7-11 it would be an ice cream cookie sandwich. Or a Klondike bar, but since I suck at coating ice cream in chocolate, I might have to pass on recreating those. Anyone has tips and tricks? Mine just slides off the popsicle or ice cream. What’s the trick to getting it to stick??
Anyway.
Since these make small waffles, they make perfect vessels for ice cream. They’re about the size of a chocolate chip cookie. So, how can you NOT fill them with ice cream and make waffle ice cream sandwiches? It’s just a no brainer in my brain.
Just look at that golden-brown color surrounding that delicious ice cream. I couldn’t help but decorate them with these cute stars from Sweets & Treats Boutique. Aren’t they just adorable?? The best part is when the ice cream starts to melt, the waffle just absorbs some of it. Which makes this whole waffle ice cream sandwich thing even more amazing.
In fact, you could easily just serve these waffles topped with ice cream and skip the whole scooping and smashing them together. But don’t let anyone know I said that. It would defeat the whole purpose of this waffle ice cream sandwich post.

Ice Cream Waffle Sandwiches
Liege style waffles are slightly sweet and hearty enough to make Ice Cream Waffle Sandwiches. Fill them with your favorite ice cream for a delicious summer treat.
Ingredients
- 1/2 cup milk
- 2 1/2 teaspoons yeast
- 1/2 cup butter
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 cups flour
- 2 large eggs
- 1 1/2 cups ice cream
Instructions
- Place the milk in a microwave safe bowl and heat on high 45 seconds. Test the temperature with your finger. It should be just slightly warmer than your finger. If not, heat at 15 second intervals until the milk feel slightly warm.
- Stir the yeast into the milk with the butter salt and sugar. Allow to set until bubbly.
- Stir the flour and eggs into the milk mixture until combined. The mixture will be thicker than a traditional waffle batter. Allow to rest one hour.
Preheat your waffle iron. - Spray lightly with cooking spray or brush with butter before dropping 1/4 of the batter into the center of the waffle iron. Cooking according to manufacturer’s directions spraying or brushing between each waffle (5 to 7 minutes or until steam begins to subside).
- Top the waffles with a scoop of your favorite ice cream.
