This week I kept hinting at these popsicles. Leaving a little bread crumb trail like Hansel and Gretel. Well, you’ve finally made it to the witch’s sugar shack. And, no, I’m not going to bake you in the oven. At least I think that’s how the story goes. Yes, I know they escaped but I think that’s what the witch was planning, wasn’t it?

My sister and I spent as many waking hours as possible at the pool. Heck, when we first moved in there wasn’t a pool. We had to cross a SUPER BUSY intersection to get to a pool that we could use for the first year there. It’s a 4-lane road that has a small number, if that indicates how busy this road is.

We always walked past a little convenience store on the way there. The parents gave us a small amount of money to purchase a few snacks for the day. For me, it was Bugles or Munchos and a soda of some sort. Typically Diet Coke. There wasn’t much of a selection in sugar free sodas back then.

Fast forward a year and the pool is finally ready in our housing development. YAY! That’s when the real fun began. We would easily walk there without crossing a major road; just a parking lot. There were plenty of kids to play with and always an ice cream truck at least once a day.

Sometimes they would come twice. Once in the early afternoon to get the kids with money the parents gave them and again in the evening. Because that’s when the parents would join the kids at the pool and would have additional money for ice cream.

Smart man he was!

Heck, even when it was pouring raining and we couldn’t swim we were still there. Those that could drive would run to 7-11 and get some snacks for all of us to munch on. We rounded up as many of the umbrella tables as we could and had a massive Monopoly game or something like that. Us kids were bound and determined not to leave the pool. The ice cream man sometimes showed up on those days, too.

The hubs and I were talking about this the other day, and one of my friends posted something about it on Facebook. What was your favorite at the ice cream truck? My sister loved the bomb pop. You know the red white and blue one that had three different flavors in it?

For me, it was the push up pop.

Yes. That orange sherbet pop that had the little stick in the bottom you pushed the popsicle up to get to the rest of the deliciously sweet orange treat. That was my favorite. I like the sherbets when I was growing up. Now, don’t get me wrong. That’s not my favorite ice cream treat. That’s any ice cream with chocolate and peanut butter in it. But they never had popsicles or treats at the ice cream truck with that combo.

I liked the strawberry shortcake bar. That is the hubs’ favorite. I had my fair share of chipwiches; or the ice cream sandwiches made with chocolate chip cookies. And of course, regular ice cream sandwiches. But my go to is the push up pop.

Fast forward a few years. The shopping mall near us had an Orange Julius stand. Oh my. I was in heaven with those things. I think I bought one every time I went to the mall. The orangey and creamy beverage had me hook line and sinker. We even found a copy cat recipe before they were even popular.

I don’t know what we called them back then, but it wasn’t copycat recipes.

Of course, those shops are long gone here, but the memory of their delicious flavor remains. Since you made the recipe with ice cream, I associate it with summer, for some reason. I’m sure I made them all year, but summer seems to stick with me. Which is why I’ve tried to recreate them in this summer treat. And in a popsicle.

Because I can’t have enough popsicle recipes on my blog. They’re going to be as bad as macaron recipes eventually. I AM adding three this week alone. I really should make a list of them for y’all to easily find and try. Some of them are totally delicious. At least I think so. The hubs wasn’t a fan of the cardamom one. He doesn’t like cardamom.

We already learned about popsicles in my s’mores popsicle post. We used to have those doubles in the house all the time. There were two of us and we didn’t have much money growing up. It was easy to split them apart and have us stop whining about having one after dinner. That was until the pudding pops came into being.

Do you remember those? Pudding pops? They were my favorite store-bought frozen treat. They were super chocolatey and creamy. I always associate them with Bill Cosby and that pudding part of his comedy show. That was totally me eating a pudding pop. Did he do commercials for them? Maybe that’s why. Who knows! My memory and brain are so weird sometimes.

These are not like pudding pops. They are like a frozen orange Julius, hence the name Orange Julius Popsicle. They have orange juice and orange Jell-O in them. The Jell-O is to keep them from freezing so hard they chip your teeth. That’s never very fun. Sugar, alcohol, and gelatin keep ice cream and popsicles from freezing too hard. Just an FYI.

There’s yogurt in there, too. To make them rich and creamy. Which I remember Orange Julius drinks to be; orangey and creamy. And super delicious which these popsicles are.

Now, I have to confess that I planned on going a different route with these popsicles, but I had a bit of a snafu with Candy Melts from Wilton. I planned on dipping them in the orange cream candy melts for additional orange and cream flavors. However, the candy melts were a bit thick initially and then I thinned them too much. And then I heated them too much and they seized.

After I exited the kitchen in exasperation the hubs looked at my shirt and asked which swear word pertained to the mess on it.

In a vain attempt to fix my mess I added some coconut oil to the seized candy melts. As I was stirring them all together, it kept hitting the side of the bowl and splashing on me. I have to admit, it was not my finest moment in the kitchen with popsicles.

But I wanted those cute seahorse sprinkles from Sweets & Treats Boutique on there. Aren’t they adorable? And I wanted some of the mermaid mix to be on there too. I mean, they’re the epitome of goldfish color, right? Mermaid theme just seemed to go well with them. So, I wound up dipping a few ends in there and dipping them in the sprinkles. That wasn’t working well either. I gave up and painted some of the candy melts down the spine and placing the seahorses on them.

I think they came out cute! And the hubs liked the sprinkled one. So, it made it in the photo shoot.

Orange Julius Popsicles

Prep Time: 5 minutes
Cook Time: 10 minutes

Total Time: 5 hours 15 minutes

Orange Julius Popsicles are the color of a goldfish, but
taste orangey and creamy.  To play off
the color, they’re decorated with Sweets & Treats Boutique seahorse quinn
sprinkles and sea splash sprinkles mix.

Ingredients

  • 1 1/2 cups orange juice
  • 1 cup nonfat yogurt
  • 1 teaspoons vanilla extract
  • 3 ounce orange gelatin mix
  • Orange Cream Candy Melt Wiltons
  • Sweets & Treats Boutique seahorse quin sprinkles and sea splash spinkles mix

Instructions

  1. Combine the orange juice, yogurt, vanilla extract and gelatin in a blender. Process until smooth.
  2. Pour into popsicle mold and freeze for 4 hours.
  3. Melt the candy melts according to package directions.
  4. Using a offset spatula, spread a thin layer of the melted candy melts across the center of the popsicle. Carefully place a few of the seahorse quin sprinkles.
  5. Alternatively, you can dip the end of the popsicle into the candy melts and sprinkle with the sea splash mix.
  6. Invert the lid of the popsicle mold and place the popsicles in the lid so they stand upright. Freeze an hour before serving.
